I can get the connection to be successful to my Facebook page, and posts get scheduled for posting. But when I check in later in the day, nothing has been posted, and it says the connection was interrupted. I cannot find any ways to troubleshoot this issue - are there logs somewhere that'd help out? Is this a known issue for certain FB Page setups?

Are you receiving any notifications about your Facebook posts in Blog2Social?
Kindly check your notification details and attach a screenshot if you are receiving any so I can take a closer look. You’ll find them here:
Social Media Posts -> Notifications -> Details
Why are my posts not being shared?
I would also suggest checking the Blog2Social app in your Facebook profile under “Business Integrations” and making sure that all permissions have been granted. This is explained under “Facebook settings in your Facebook profile” in this guide.
